Cicciolata is produced by recovering that part of pork that would otherwise be difficult to consume. The head is first boiled for hours along with vegetables and herbs, then, when cooked, it is chopped. At this point, small pieces of meat with an irregular shape and texture are added, made with the leftovers from the production of lard, as well as salt, pepper and bay leaf. Everything is cooked for a while longer, so as to mix the mixture well, which is then wrapped in a linen cloth and crushed with a wooden press to release the excess fat.
