The "Casciotta d’Urbino" is produced in the province of Pesaro-Urbino, according to dairy techniques with ancient roots.
"Casciotta d'Urbino" is a semi-cooked full-fat cheese, obtained with whole sheep's milk in a variable measure from a minimum of 70 to a maximum of 80%, and whole cow's milk for the remaining 20-30% coming from two daily milkings.
Salting is carried out dry, or alternating the brine with dry salting. The expected ripening period is 20-30 days
