Goat cheeses belong to an extremely heterogeneous family of cheeses, characterized by fresh or aged products with completely unique flavors and aromas. The soft paste, white in color, compact, without holes, with a consistency that can range from chalky to creamy, has a delicate, more or less acidic flavor that varies from sweet to spicy as it ages.
In the history of human nutrition, goat milk, after having registered a sharp decline in consumption at the beginning of the twentieth century, is now regaining its lost prestige. Its dietary-nutritional properties are indeed noteworthy, making it a valid substitute for traditional cow's milk.
It should be remembered that goat's milk, in addition to being much leaner than cow's, is particularly rich in thyroxine, a hormone secreted by the thyroid that promotes growth and longevity; it is also particularly rich in a polyunsaturated fatty acid which seems to have an anticarcinogenic action, as well as decreasing total cholesterol, LDL and triglycerides in the blood.
