Taleggio is a raw cheese with a washed rind. The rind, during maturation, is subjected to sponging of salt and water to manage the molds that develop on the surface. Molds are essential for the quality of the seasoning.The paste is soft, straw-white in color, homogeneous and compact, but it is soft and melting on the palate. It recalls the aromas of the undergrowth, with a truffle aftertaste and a medium persistence.
