Made from the finest aubergines, harvested, cut into strips and processed with herbs and spices according to tradition.
They develop an intense aroma and a pleasant soft yet crunchy texture.
Preserved in the finest extra virgin olive oil, which preserves their colour and enhances their aroma and flavour for a perfect taste intensity.
Ideal as an appetiser, on warm bruschetta for a flavourful aperitif or as an accompaniment to cold cuts, cheeses and grilled meats.

Peperonata is a classic recipe handed down from grandmothers, a side dish (or appetiser) made with peppers, tomatoes, onions and basil, which when cooked together create a veritable symphony of flavours.
The Sicilian version differs from all others in the addition of vinegar and sugar, which give the peperonata an irresistible sweet and sour taste.

Washed, destemmed and matured in salt for 3-4 months. They are then dried to remove excess water and mixed with whole sea salt, then bottled au naturel.

Perfect as a side dish, excellent to add to fresh salads, or to prepare rice salad or Russian salad, to create canapes and fill sandwiches, to prepare an appetizer with cheeses and cold cuts or with other vegetables if we prefer a vegetarian appetizer
