To prepare mushrooms in oil, you need to clean the mushrooms well with a damp cloth or by passing them under running water to remove excess soil. Cut the stems and dry them well. Put the water, vinegar and salt in a saucepan, bring to a boil and add the mushrooms which will have to cook for about 5 minutes. Once ready, drain and put them to dry on a clean cotton cloth for at least a quarter of an hour. Then transfer the mushrooms to a bowl and add the pepper, chopped garlic and chopped parsley, mix well and place the mushrooms in sterilized glass jars. then pour in the oil and squeeze them well so that they are completely covered with oil and to let out the air bubbles. Close them well and put them in a dry place away from light. Keep them at least a week before consuming them.
