The name derives from the noun crumb and it seems that the recipe dates back to before the 17th century. It is a cake of poor origins, at the beginning in fact the ingredients were those typical of the peasant tradition (corn flour, lard and hazelnuts) and over the years they have refined.The recipe today provides that the flours (white and yellow) and sugar are in equal parts. Furthermore, the ingredients must not be chopped, on the contrary, the characteristic feature of the cake lies in its irregular consistency, due to the fast processing and coarse cut of the almonds.
