Speck is a characteristic product of the Dolomites and is brown in color. When cut, the slice is red with white-pink parts. It has an elastic consistency. The taste is typical, intense, savory, but not salty, with hints of smoke, spices and aromatic herbs.
It owes its unique and unmistakable taste to the light spiciness with rosemary, juniper, bay leaf, a little salt and pepper.
