Raschera is a cheese made from cow's milk with the addition of goat's or sheep's milk. Its production is made entirely in the province of Cuneo, from the moment of milking to maturing.
Cow's and goat's milk are curdled at a temperature of 30 * C with the addition of calf's rennet. The cheese is left to mature for no less than a month.
