Mortadella 3.800 kg ca

Mortadella is prepared with carefully selected pork, processed according to a European specification and which are shredded and reduced to a very fine paste through three different steps in special meat grinder machines. The meats are then enriched with fat cubes. The resulting mixture is then stuffed into natural or artificial casings and cooked in large dry air ovens, then quickly cooled.
